Welp it’s official – I requireadult supervision around creamy dips. After the Costco Spinach and Artichoke DipFiasco of 2020 (I can’t/won’t tell you how long that giant tub lasted at my house,) and Pickle Wrap Dip Gate of, well, a week after that, it’s clear that I cannot be trusted around a big bowl of delicious creamy dip. One dunk turns into five then suddenly snack time has reached scandal status.

Anyway, the Super Bowl is this weekend and I am requiring that you clear a bowl-sized-hole in your spread for a batch of Pickle Wrap Dip aka the intense deliciousness of corned beef spread with cream cheese, rolled with a pickle then sliced…in dip form. Pickle Wrap Dip falls into the category of throw stuff in a bowl then stir itand clearly I am here for it. Cream cheese, sour cream, corned beef (see below for my favorite, certified gluten free brand,) minced pickles, and dried minced onion combine to create one of the best dip recipes EVER. Whip up 5 minutes before kick off or up to two days ahead of time. It’s fabulous right out of the gate, but like most dips, gets even better as it sits.
Speaking of chip-busting, I like serving this hearty dip with sturdy tortilla chips, though pepper slices, cucumber slices, or crackers all work too. Or, you can do what Cameron did and eat a dollop with a pickle. What can I say, when the kid commits, he commits.
How to Make Pickle Wrap Dip
Start by mixing 8oz softened cream cheese – I use 1/3 less fat – 8oz sour cream, and 1 Tablespoon dried minced onion in a large bowl until smooth.
Next add 6oz chopped corned beef – I use Buddig brand which is certified gluten free – and 1 cup minced pickles then fold to combine.

Is there an alternative to the beef I can use if I’m a vegetarian? Or can I omit it entirely?

I make this several times a year. I’m fortunate enough to live Near a Dutch butcher shop( south central Iowa), I buy their dried beef, and use it in my dip. Ham is a good substitute too. My aunt makes with sweet pickles- she doesn’t like dill. Mix it up have fun with this dip! I never bring home leftovers!

Would leave this 10 stars if I could! I’ve always loved pickle roll-ups but hate how time consuming they are to make. This version was done in less than 10 minutes! So tasty!

I finally made this dip for a get together and it was amazing!! It was a huge hit! And, I loved knowing it was safe for me to eat. Until people used their pita chips to dip directly out of the bowl… Good thing I ate a ton before that happened. :)

This is delicious! We love pickle wraps but they are a pain to make. This was so quick and easy to throw together.

To answer earlier commenters, this is great with Greek yogurt instead of the sour cream! We almost never use sour cream anymore but DANG if this wasn’t fantastic. I’ve had my eye on this recipe for awhile now, decided it would be Black Friday dinner along with a couple other dips…totally addictive and munchable!
